If apples are peeled and then steamed, they will definitely lose valuable nutrients, including quercetin which is concentrated in the peel. One option for your patient might be to air dry the peel and then grind it into a powder since the total phenolic and flavonoid contents of the dried peel powder are similar to those of fresh apple peel.
